There are 3 different matcha grades available on the market (Culinary, Latte & Ceremonial), from left to right represents the quality, basic culinary being the lowest. Culinary is usually used to prepare goods such as pastries, latte grade (as the name mentions) is used to prepare lattes or smoothies, and ceremonial grade is used in the traditional Japanese tea ceremony known as "chanoyu." The US market usually consumes matcha in the form of a drink. This being said, you can use any of the grades for your daily matcha drinks. Another way to tell the quality of matcha is its color intensity. The more vibrant the color, the higher the grade. These qualities are usually seen in more costly and high quality matcha. We extensively sampled many grades before concluding that for the everyday consumer, latte-grade matcha is high quality at a fair price.
